- 500g potatoes
- 4 eggs
- 2 tbs. extra virgin olive oil
- 1 onion, grated
- Peel the potatoes, wash them thoroughly and cut into thin slices, season with sea salt.
- Heat oil in a frying pan and add the salted potatoes. Stir them until they are slightly browned.
- Add the onion and let it fry for 3 or 4 minutes.
- Beat the eggs and add the fried potatoes. Mix well. Cook them on high heat. Brown on one side and then turn, to brown the other.
