Once the main dishes are chosen (often determined by tradition rather than personal taste) you can put your own stamp on Christmas lunch with some interesting sides. Try to think about the great flavour matches when you choose your sides: pork loves apple and fennel; a glazed ham will benefit from a citrus salad to cut the rich flavour; a traditional roast turkey is lovely served with roast potatoes.
