Bolognese Sauce


Ingredients

  • 1 kg mince beef
  • 2 onions - chopped
  • 4 garlic cloves crushed or 2 tsp of minced garlic
  • 1 stick celery - sliced
  • 800g crushed tomatoes
  • 1 carrot - chopped
  • 2 bay leaves
  • ½ bunch basil
  • ½ glass of red wine
  • 1 tsp stock powder
  • 2 ltr water
  • 1 tbsp balsamic vinegar
  • 1 whole red chilli (optional)
  • Olive Oil
  • Salt and pepper

Method

  1. In frying pan fry mince with a little olive oil. Break up mince as it browns through. Cook until it dries but don’t burn.
  2. Add whole chilli (this is optional) and Balsamic vinegar and reduce.
  3. Add wine and garlic and slide in vegetables and basil (no need to chop) and bring to boil.
  4. Sprinkle over stock powder, add tomatoes and water, salt and pepper to taste.
  5. Simmer for 1-3 hours (3 hours is best)
  6. Serve over pasta with a sprinkle or parmesan on top.
