Tuna Potato Crisps


Ingredients

  • Tuna potato crisps
  • Ingredients
  • 1 (425g) can premium yellowfin tuna in oil
  • ½ bunch spring onions chopped
  • 6 medium potatoes (roasted in their skins for approx 50 mins, then cooled & skinned)
  • ½ punnet cherry tomatoes cut in half
  • 100g grated cheddar
  • 25 g unsalted butter
  • Olive oil

Method

  1. Drain half the oil from the tuna and place into a large mixing bowl and stir through the spring onion, cherry tomatoes and grated cheese.
  2. Smash the potatoes into the tuna and tomato mix then place onto an oiled baking tray using round moulds to shape.
  3. Sprinkle with small knobs of butter then bake at 220 degrees for about 5-10 minutes.
