Veal and Tomato Salad


  • 300g veal steak

  • 4 large tomatoes, peeled and seeded

  • 1 radicchio

  • 2 spring onions, finely sliced

  • 100g green beans trimmed and blanched

  • 100g snow peas trimmed and blanched

  • 10g butter

  • 2 tbsp french mustard

  • splash of white balsamic vinegar

  • splash of olive oil


  • 1.

    Toss together the radicchio leaves with spring onions and tomatoes.

  • 2.

    Mix the mustard oil and vinegar intoa dressing

  • 3.

    Fry the sliced veal steak for 2 minutes on each side then toss in the beans and a knob of butter. When the butter has melted take off the heat and pour the dressing over the veal and beans, then on top of the salad and serve.
