BBQ Roast Pork


Ingredients

  • 1 pork fillet
  • 4 tbsp chilli oil
  • Dash of red food colouring
  • 1 tsp crushed garlic
  • 1 tbsp golden syrup
  • 100ml rice wine vinegar (or white wine vinegar)
  • 1 tbsp fish sauce
  • 50ml extra light olive oil
  • Splash sesame oil
  • 150g rice noodles

Method

  1. Mix all ingredients (except pork) in a large bowl until all combined.
  2. Place the pork into the marinade and then into the fridge overnight.
  3. Remove the meat from the marinade. Shake off excess liquid. Splash olive oil and sesame oil into an ovenproof pan, bring up to heat, then seal the pork on all sides, then baste with more marinade.
  4. Bake in an oven set at 250 degrees for15-20 minutes.
  5. Pour the marination liquid into a small saucepan and reduce to a sauce.
  6. Cook rice noodles, then toss through the red sauce. Slice the pork diagonally, and serve on a bed of noodles.
