Place all ingredients into a saucepan, put on the lid, bring to a boil then simmer for 25 minutes.
Remove the chicken from the saucepan, place on an oven tray. Bake at 250C for around 30-40 minutes. In the meantime, continue to simmer the curry for approximately 25minutes.
Chop the chicken into portions.
Serve the chicken on top of the curry sauce, which is now thick and lush.
