Crispy Cape Tart


  • 1 Bakers Delight Cape Seed Loaf (sliced)

  • 150g smoked ham (medium slice)

  • 100g cherry tomatoes

  • ½ Spanish onion

  • ½ cup basil, shredded

  • 1 tbsp Always FreshExtra Virgin Olive Oil

  • 1 tbsp Always Fresh White Balsamic Vinegar

  • 1 tbsp French mustard

  • Always Fresh Extra Virgin Olive Oil Spray

  • Pepper


  • 1.

    Remove the crusts from each slice of bread then roll out to half its thickness (using a rolling pin.)

  • 2.

    Using a pastry cutter, cut the thinly sliced cape seed slices into circles.Spray a muffin tray with oil, then press the bread circles in, then bake at 190c for about 10 minutes or until crispy.

  • 3.

    Mix together the oil, mustard and vinegar to form a dressing.

  • 4.

    Chop the ham, onion and tomato, then toss together with the dressing and a grate of cracked pepper, fill each tart case with this mixture then sprinkle with shredded basil.
