  • 1.

    In a large bowl combine all ingredients by hand, until just together, do not overwork as it can toughen.

  • 2.

    Place onto a floured bench, press down slightly until about 4 cm thick and cut with a 7 cm cutter.

  • 3.

    Baste with milk and bake at 180C for about 25-30 minutes.

  • 4.

    Allow to cool slightly before serving with jam and cream.

I followed this recipe exactly and the scones turned out exactly like this picture. Without the cream and jam they were dried up little floury rocks - not nice at all!
