Cheesy Pork Omelette


Ingredients

  • 4 eggs
  • 2 tbsps thickened cream
  • 2 tbsps grated parmesan
  • 1 heaped tsp smooth ricotta
  • ½ pork fillet sliced into medallions
  • ½ red chilli finely chopped
  • 1 tsp ground paprika
  • 2 tbsps olive oil
  • tomato capsicum and chilli sauce

Method

  1. Combine all ingredients in a bowl and whisk until combined.
  2. Cook over a low heat until the egg just sets then serve with the spicy pork.

Spicy Pork

  1. Combine all ingredients in a bowl and allow to marinate for at least fifteen minutes.
  2. Cook on very hot barbeque for 2 minutes each side then serve with the cheesey omlette.
