Gummy Goujons


  • 500g gummy shark fillet

  • 200g breadcrumbs

  • 1 tsp. spicy pepper

  • 1 egg

  • 100g plain flour

  • 400ml canola oil

  • Tartare sauce

  • 4 tbsp. whole egg mayonnaise

  • 8 cornichons ( baby gherkins)

  • 8 capers

  • 1 tsp. chopped parsley

  • A squeeze of lemon juice


  • 1.

    Cut the fish into 2 cm. wide strips along the fillet as long as you can.

  • 2.

    Add the spicy pepper to the breadcrumbs then dredge fish through flour, egg and breadcrumbs.

  • 3.

    Fry in hot oil until crispy and golden brown

  • 4.

    Roughly chop the cornichon, capers and parsley together then mix with the mayonnaise and lemon juice and serve with the crispy gummy goujons
