Place 100g of the macadamia nuts, celery, onion, basil and a splash of olive oil into blender and pulse until the mix is mostly blended.
Place the lamb on a baking tray and spread the macadamia paste all over. Stud with some extra macadamia nuts and season with freshly ground pepper.
Place into a preheated oven at 200C for 45 minutes.
Slice and serve with the delicious pan juices
