Whole Grain Pancakes


Serves 4

Ingredients

  • 1 cup oats
  • 1 cup All Purpose flour
  • 1 cup whole-wheat flour
  • 2 tablespoons baking powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons honey

Method

  1. Preheat a large skillet over medium to medium low heat.
  2. Whisk together the oats, flours, baking powder, nutmeg and salt. Using the same whisk, but in a second bowl, whisk together the milk, oil, eggs, vanilla and honey. Pour the wet into the dry mixture and stir briefly, just until combined. Spoon into the skillet and cook away!

    I found nutmeg last night which reminded me of an episode from Chef at Home. I liked his idea of incorperating nutmeg to give the pancakes a traditional doughnut flavor. When I woke up around 10:00 a.m I made brunch for the family. The only thing missing was home made hash browns...

    these are so good! a really nice nutty flavour, with a great texture and slight spice! and healthy :P
