Lemon Jam


Ingredients

  • 5 lemons de-seeded and cut into pieces
  • 1 tablespoon sea salt
  • Cracked black pepper
  • ½ cup white sugar
  • ¼ cup extra virgin olive oil
  • 2 tablespoons oregano or basil leaves

Method

  1. In a food processor combine the lemon, salt, pepper & sugar and puree drizzling in the olive oil, then add in the herbs and continue blending for 20 seconds.
  2. Taste & adjust seasoning (including sweetness)
