  • 5 lemons de-seeded and cut into pieces

  • 1 tablespoon sea salt

  • cracked black pepper

  • 0.5 cup white sugar

  • 0.25 cup extra virgin olive oil

  • 2 tablespoons oregano or basil leaves


  • 1.

    In a food processor combine the lemon, salt, pepper & sugar and puree drizzling in the olive oil, then add in the herbs and continue blending for 20 seconds.

  • 2.

    Taste & adjust seasoning (including sweetness)


Serve with grilled fish
