Cucumber gazpacho


Ingredients

  • 2 peeled & seeded Cucumbers
  • 2 tablespoons sherry vinegar
  • 1 green chilli
  • sea salt
  • cracked Black pepper
  • ½ cup Extra Virgin Olive Oil

Method

  1. In a food processor or blender combine the cucumber, sherry vinegar, chilli, sea salt & pepper
  2. Then drizzle in the olive oil until it's the right consistency and flavour.
