Chilled Gazpacho

Ingredients

  • red capsicum (deseeded) 1

  • 1 yellow capsicum (deseeded)

  • 1 green capsicum (deseeded)

  • large truss tomatoes (1 per person)

  • garlic cloves (1 per person)

  • 1/2 bulb fresh fennel

  • 1 jalapeno

  • 1 large cucumber

  • 1/2 tin black anchovies in oil

  • 1/2 tin white anchovies in pickling liquid

  • 1/2 bunch coriander

  • 1/2 bunch parsley

  • 1/2 bunch basil

  • 400 ml extra virgin olive oil

  • jamon iberico (1 slice per person)

Method

  • 1.

    Place all ingredients in food processor.

  • 2.

    Blend until smooth.

  • 3.

    Pass through a strainer or colander into a chilled cocktail glass.

  • 4.

    Add two ice cubes and finish with a slice of jamon on top.
