Apple & Rhubarb Crumble


  • Crumble mix

  • 125 g Cold unsalted butter

  • 125 g Castor sugar

  • 2.5 g salt

  • 125 g Flour

  • 125 g Almond meal

  • Fruit mix

  • 150 g Cream Fraiche

  • 60 g Castor sugar

  • 1 Egg

  • 2 Vanilla beans

  • 1kg Apples

  • 800 g Rhubarb

  • 100ml Poire William


  • 1.

    Cut the rhubarb into desired pieces and masserate with some sugar over night.

  • 2.

    Cut the butter in 1.5cm dice and place in a bowl with the rest of the Crumble mix ingredients. With the help of a wooden spoon mix until you obtain larges grains.

  • 3.

    Peel & core the apples and cut in large dice, reserve.

  • 4.

    In a bowl whisk together the cream, the 60gr of sugar, egg and the poire william.

  • 5.

    Split the vanilla beans and put the seeds in the mix.

  • 6.

    In an oven tray place the apple and rhubarb in the bottom, pour over the fruits and cook in the oven for 10 minutes at 180Âșc .

  • 7.

    Pull the dish out of the oven and place the crumble mix over the fruit and cook in the oven for another 20 to 25 minutes.

  • 8.

    To serve with vanilla ice cream.

this is yummy,,,,made it for my mum on her birthday,,,even mum said it was better than her recipe!!
