Method

  1. Wash and place the potato onto a bed of rock salt with the garlic cloves and place into a moderate oven180C for 45 minutes. Remove the garlic cloves after 10-15 minutes when they have roasted and are soft.
  2. Remove the flesh from the potato skin and sieve or mash. Whilst the potato is still hot, blend the egg yolks with a pinch of salt, mustard and a splash of vinegar. Add a drizzle of oil and blend until smooth.
  3. Add the warm potato and squeeze the garlic from the skin, add more oil and blend. Season with salt, a squeeze of lime and a generous amount of cracked black pepper.
  4. Peal the prawns and remove the digestional tract.
  5. Season the steak and prawns with olive oil, thinly sliced chilli and garlic, pepper & salt. Grill the steak and prawns.
  6. Slice and grill the bread and smear generously with the black pepper and lime aioli. Place the steak on top and then a couple of prawns.
  7. Toss the garlic with a touch of olive oil and a pinch of salt, place the leaves on top of the sandwiches.

    There is a few bits of this recipie that I found confusing, The ingredients ask for oregano, but the method does not tell me where it is used. Also the last step makes no sense either... What leaves? it says just garlic olive oil and salt. its sounds good and i'll give a crack to the best i can, but maybe if i could watch it too, I would have a better idea of what its all about.

      Jeff81 - I'm sure whoever wrote the recipe meant to say Rocket Leaves not Garlic for the last step. But I agree it's a confusing recipe. It's funny, I watched this episode on the weekend and I swear half the stuff in this recipe wasn't on the TV recipe (Potatoes?) Also, does he want us to add the potatoes to the aioli? I'll give it a go tonight anyway, see how it goes...
