English Roast Beef


Ingredients

  • 2½ kg standing rib of beef
  • 2 tablespoons salt
  • Freshly ground pepper
  • 1/2 cup chopped thyme
  • 1/2 cup chopped rosemary

Method

  1. Season rib roast generously with salt and pepper.
  2. Rub in thyme and rosemary.
  3. Pre heat oven to 220 c.
  4. Place rib in hot oven for fifteen minutes then turn oven down to 170 c.
  5. Cook beef for a further one hour and fifteen minutes for medium rare.
  6. Cook for a further 20 minutes for medium.
  7. Rest the beef for 30 minutes before carving.

    Made this tonight with a 2 bone rib (~1.4kg) and it was amazing. Bashed peppercorns, garlic cloves & fresh rosemary in a mortar & pestle with some dried thyme and used that as a rub after mixing in some olive oil. Served with garlic mash, fresh steamed corn & glazed baked purpled carrots. lush.

    Cooked this last night.....sensational. Had the leftovers for sandwiches today, just as good.
