Sticky Black Rice Pudding


Serves 4

Ingredients

  • 1 1/2 cups water
  • 2 star anise
  • 2 cardamom pods
  • 2 kaffir lime leaves
  • 1 tin coconut cream
  • 1 cup glutinous black rice soaked in cold water
  • 1 cup condensed milk
  • 100 g palm sugar
  • 2 bananas
  • Mint leaves to garnish

Method

  1. Bring water to boil.
  2. Add star anise, cardamom, kaffir lime leaves.
  3. Add coconut cream, bring to boil.
  4. Add black rice, simmer gently while stirring every few minutes.
  5. After about twenty minutes the rice should be cooked .
  6. Add the condensed milk and palm sugar.
  7. Cut banana and arrange in bowls, top with rice, condensed milk and mint.
  8. Serve.

    if you used palm sugar only, would that make a huge difference to the taste, the thought of using condensed milk and palm sugar is a huge sugar hit

    The steps indicate the need for "palm sugar" but I do not know how much since it is not in the ingredient list. Does anyone know?

      I suspect that the second mention of "condensed milk" should be "Palm sugar". It'd be wierd to weigh out condensed milk.
