Alaskan Beans


Serves 4

Ingredients

  • 2 tbsp olive oil
  • 1 onion (finely diced)
  • 2 garlic cloves
  • 2 fresh bullet chilli (seeds removed and chopped)
  • 1 tsp cumin seeds (toasted and ground)
  • 1 tsp coriander seeds (toasted and ground)
  • 200g pancetta, (sliced)
  • 750ml tomato pasata
  • 24 drops tabasco sauce
  • 2 cups lima beans (pre soaked and cooked till tender)
  • 1/4 cup canadian maple syrup
  • 1/4 cup parsley (roughly chopped)
  • Basil leaves (torn)

Method

  1. In a pot heat oil slowly.
  2. Add onion, garlic, chilli, cumin, coriander, and pancetta, stir on a gentle heat for five minutes
  3. Add tomato pasata, Tabasco, and lima beans, simmer for ten minutes, gently.
  4. Add maple syrup and herbs.
  5. Season to taste.

Serve with the following:

  1. 4 free range Eggs
  2. 8 slices Toast, buttered
  3. 8 rashers bacon, grilled
