Alaskan Beans

Ingredients
  • 2 tbsp Olive oil
  • 1 Onion (finely diced)
  • 2 Garlic cloves
  • 2 Fresh bullet chilli (seeds removed and chopped)
  • 1 tsp Cumin seeds (toasted and ground)
  • 1 tsp Coriander seeds (toasted and ground)
  • 200g Pancetta,(sliced)
  • 750ml Tomato pasata
  • 24 drops Tabasco sauce
  • 2 cups Lima beans (pre soaked and cooked till tender)
  • 1/4 cup Canadian maple syrup
  • 1/4 cup Parsley (roughly chopped)
  • Basil leaves (torn)
Method
  • In a pot heat oil slowly.
  • Add onion, garlic, chilli, cumin, coriander, and pancetta, stir on a gentle heat for five minutes
  • Add tomato pasata, Tabasco, and lima beans, simmer for ten minutes, gently.
  • Add maple syrup and herbs.
  • Season to taste.
Serve with the following:
  • 4 free range Eggs
  • 8 slices Toast, buttered
  • 8 rashers bacon, grilled
