Pearl Meat with lemon & parsley


Serves 4

Ingredients

  • 200 g pearl meat
  • 1 lemon juice only
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon finely chopped parsley
  • Sea salt
  • Cracked black pepper

Method

  1. Slice the pearl meat across ways very thinly.
  2. Heat a wok with the olive oil until nearly smoking and add in the pearl meat.
  3. Toss in the parsley and take off the heat
  4. Add in the lemon juice and season to taste. Serve in a polished pearl shell.
