Orange Olive Oil Cake

Makes 1 9-inch cake.

Serves 8 to 10

Ingredients

Method

  1. Preheat oven to 350 °F and butter and flour a 9-inch round cake pan.
  2. In a large bowl, whisk eggs and sugar. Add olive oil, milk and orange zest and mix well. In a separate bowl, stir flour, baking powder, baking soda and salt. Add to olive oil batter and stir just until smooth. Pour into prepared pan and bake for 40 to 50 minutes, until a tester inserted into the center of the cake comes out clean.
  3. Let cake cool completely, then turn out onto a plate and dust with icing sugar.

    I download lots of recipes and cook most of them at some stage. Not all recipes are memorable, but this cake is one of the most memorable cakes I have ever made and it does get better after a few days, that is if any is left. This is well worth baking and sharing with family and friends.

    Great cake, lovely and moist, and so easy because there's no need to cream the butter and sugar: using olive oil makes it all easier. Still fresh and yummy the next day :) This recipe is a keeper :)

    I've made this cake many times and have NEVER had more requests for any recipe. Think it's good right out of the oven? Wait a few days (if it lasts) - it only gets better. Bravo, Anna.
