Sea Urchin Sandwiches


Serves 1

Ingredients

  • 6 live sea urchins or 12 cleaned roes
  • 4 Slices white bread
  • 50 g softened Butter French or Danish or best quality available
  • 1 Lemon zest only
  • sea salt
  • cracked Black pepper

Method

  1. Butter the white bread
  2. Grate over lemon zest
  3. Add the sea urchin & season
  4. Cut of the crusts
  5. Cut into finger sandwiches

    anyone who has been for a dive around the south coast would have seen thousands of sea urchins all over the place. I regulary break them apart to attract fish... Never thought about eating them myself lol

    sea urchin is known as 'kina' to the Maori people and is a great favourite. we usually eat it with bread or just crack open the shells and spoon out the roe. delicious! it is found on the rocky shores in nz and is found in Oz too.
