Cozzi siciliano

Traditional Mussel dish from my village in sicily. Very easy and a great crowd pleaser. One note , make just befor serving.

Serves 6

Ingredients

Method

  1. In a big pot melt some butter and fry your shallots till soft. add garlis and chilli salt pepper. Throw in your cleaned mussels and once you see stem beginning to form , splash in your white wine. PUT a lid on and keep it steaming until you see mussels opening , throw in your tomatoe and parsley - YOUR DONE. TURN OFF HEAT , place lid back on for 2 minutes . Mix through and serve straight away. Serve with some nice italian bread for dipping into the sauce created by the cooking.

Notes & Tips

DONT keep this warmed until you server as the mussels will shrink shrivel and become rubbery. Serve as soon as you plate. ps - dont throw away the extra sauce!! you need it to dip your bread into..!!

    Simple and so good - best with a box of Portarlington (VIC) mussels and a glass of Catalina Sounds Sav Blanc!
