Apple almond tea cake

A delicious almond scented slice with a buttery cake base and an apple and flaked almond topping. It's light and moist with a bit of crunch. Great with a cuppa.


  • 125 g Butter - room temp

  • 2/3 cup Castor sugar

  • 2 Eggs

  • 1/2 cup Self Raising flour

  • 1/4 cup Plain flour

  • 1/4 cup Almond meal

  • 1/3 cup Milk

  • 1/2 tspn Vanilla extract

  • tiny drop Almond essence - (optional)

  • 3 Apples - peeled and cut into small pieces

  • 4 tspn caster sugar

  • 100g flaked Almonds


  • 1.

    Cream butter and sugar til light and fluffy.

  • 2.

    Beat in the eggs.

  • 3.

    Fold in the flours, almond meal, vanilla and almond essence and milk.

  • 4.

    Pour into a slice or lamington pan lined with baking paper.

  • 5.

    Arrange Apple pieces over the cake mix and press in slightly.

  • 6.

    Sprinkle 2 tspn sugar over the apples.

  • 7.

    Sprinkle flaked Almonds over the apples and sprinkle 2 more tspn sugar over that.

  • 8.

    Bake in 180 C oven for 40 mins


Sometimes I give it a quick spritz with cooking spray over the whole thing before I bake it
