Combine flour, salt & pepper,herbs, garlic,egg and some milk.
Beat with a whisk until thick and lump free.
Add more milk a little at a time whisking until batter resembles lightly whipped cream consistancy.
Fold in diced lamb and leave to rest for 30mins minimum.
Heat a fry pan to medium heat add a knob of butter and equal quantity of oil when hot add a ladle full of batter at a time cooking until bubbles form on top turn over and cook for 30 seconds more remove to papered plate and cook the rest adding butter and oil as necessary. Reheat in a warm oven if required.
Alternate cooking method make batter to whipped cream consistancy and add spoonfuls of batter and deep fry until crisp and golden.
Serve both with mashed potatoe and sweetchilli sauce.

These are great eaten hot or cold for picnics or lunches.
Try adding other flavourings to the batter eg: Sweetchilli sauce, mint sauce, 5 spice powder, it is entirely up to you.
