One-Pot-Meal

This is a very balanced meal with meat, veges, tofu and mushrooms - all in one pot.

Serves 4

Ingredients

  • Ingredients a
  • ½ kg tenderloin of pork/chicken/beef - thinly sliced - chill meat for 15 mins before slicing
  • sauce ingredients
  • ½teaspoon black pepper
  • 1 teaspoon sesame oil
  • 1 tablespoon oyster sauce
  • 1 teaspoon chinese wine or dry sherry
  • 2 tablespoons fish sauce
  • 1 tablespoon kicap manis/sweet black sauce
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon grated fresh garlic
  • Ingredients b
  • 12 pieces of dry black mushrooms - soak in hot water for ½ hour, then cut mushroom into half
  • Ingredients c
  • 1 block of firm tofu - from woolworth - drain dry and cut into quarters
  • 2 tablespoons olive oil
  • Ingredients d
  • 1½ cup sugar snaps/snow peas or any vegetables
  • Ingredients e
  • 1 cup spring onios - cut into 2cms in length
  • ½ cup fresh coriander leaves - roughly chopped
  • 3 red chillies - remove seeds
  • 3 tablespoons olive oil for cooking
  • ½ cup of warm water

Method

  1. Mix Ingredients A and sauce and set aside for ½ hour.
  2. Shallow fry tofu, drain on kitchen paper towel and cut into 3cms cubes
  3. Heat pan/wok and add 3 tablespoons of olive oil. When pan/wok is sizzling hot, add marinated ingredients and stir fry for about 15 mins. Remove from pan and set aside.
  4. Add ½ cup of warm water to deglaze pan/wok.
  5. Add mushrooms, stir fry for 5 mins.
  6. Add cooked pork and mix well. Simmer for 5 mins.
  7. Add fried tofu and Ingrediens D. Mix well and fry for another 5 mins.
  8. Finally add Ingredients E.
  9. Serve with rice or noodles.

Notes & Tips

Kicap manis can be substituted by mixing dark soy sauce with honey. If using root vegetables e.g. carrots, parsnips etc - please par boil them
