Cook pasta and rinse under water. Allow to cool.
Place pumpkin , onion, chopped garlic and carrots on a oiled tray and place in pre heated oven set on moderate. Cook until brown and crispy.
Lightly cook pine nuts in a saucepan - tossing until cooked.
Place shaved salami pieces in saucepan with remaining ingredients. Cook through on low until pasta has reheated.
Add extra oil if required.
