Pancakes with Mixed Berry Sauce


Serves 4

Method

Pancakes

  1. Make a well in the flour and whisk in the egg yolks, butter and milk until just combined into a smooth batter.
  2. Whisk the egg whites until stiff and gently fold in the batter.
  3. Heat a large non-stick frying pan with a bit of butter or oil. Pour the pancake batter onto the pan and cook over medium heat.
  4. When bubbles start to appear on the top side of the pancake flip the pancake over
  5. Cook for another minute or so until the pancake is lightly golden on both sides. Repeat with remaining batter.

Mixed berry sauce

  1. Combine berries, sugar, cornstarch and orange juice in a medium saucepan. Cook over low heat, until sauce has reduced and slightly thickened, about 5 minutes. Make sure the cornstarch is dissolved. Remove from heat and let cool slightly. Serve over pancakes.

Notes & Tips

Left-over mixed berry sauce can be served over muesli and yogurt for breakfast.
