Vietnamese Spring Rolls

Serves 4

Ingredients

  • 8 rice paper sheets
  • Small packet of vermicelli noodles
  • X1 carrott (grated)
  • 1/2 bbq chicken
  • X2 chilli (finely chopped)
  • X1 cucumber (sliced long ways, seeds removed)
  • X1 bunch of coriander

Method

  1. Cook the noodles to instruction and strain
  2. Use a large bowl (big enough for the noodle sheets) fill bowl with water. Place noodle sheet in the bowl for 20 seconds. Remove on to a tea towel placed on a flat surface. Add Filling, roll and repeat until all ingredients used.
