Jazzy Platz

  • 3/4 cup unsalted butter, at room temperature

  • 1 cup sugar

  • 1/4 cup sour cream

  • 4 x large eggs, at room temperature

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract

  • 1 cup all-purpose flour

  • 1/3 cup ground almonds

  • 2 tbsp finely grated lemon zest

  • 1 1/2 tsp baking powder

  • 1/4 tsp ground nutmeg

  • 1/4 tsp salt

  • 2 cups mixed fruit, such as apricot halves, peach slices, plum halves and/or mixed berries

  • granulated sugar and cinnamon for sprinkling

  • 1.

Preheat oven to 350 °F and grease a 9-x-13-inch pan.

  • 2.

Beat butter and sugar until light and fluffy. Beat in sour cream, then add eggs, one at a time, beating well after each addition. Stir in vanilla and almond extracts.

  • 3.

In a separate bowl, stir flour, ground almonds, lemon zest, baking powder, nutmeg and salt to combine. Add to butter mixture and stir just until incorporated.

  • 4.

Spread batter into prepared pan and arrange fruit over batter, pressing in gently (if using plums or apricots halves, arrange with flat-side up). Sprinkle lightly with sugar and cinnamon and bake for 25 to 30 minutes, until a tester inserted in the center of the cake comes out clean.

  • 5.

Cool completely before slicing into squares and serving.

Love Anna's recipes and her show "Fresh" is just as great as her "Sugar" show.
