Quick Chicken Roll Ups

Chicken breast or thighs cooked in a hurry.


  • 1 Chicken breast per person or thighs if you prefer,

  • 1 slice ham or bacon per breast,

  • 1 slice good tasty or blue cheese per piece of chicken.

  • I serve with my version 'confetti rice'.

  • 2 cups long grain rice,

  • .5 cup frozen peas

  • .5 cup frozen corn kernels

  • 1 medium diced red capsicum.

    If using breast then butterfly cut each one, place cheese in middle and close 'flap' back to recreate the breast, alternatively when using thighs roll up with cheese inside. Wrap ham slice or bacon around and secure with a wooden toothpick. Place into a microwave safe shallow dish and put a loose cover or plastic wrap over. Microwave on medium high for 10 to 20 mins, depending on power of microwave (750 watt use 15 mins max.) Let rest for a couple of minutes before serving. There is no need to add extra salt as the cheese and ham/bacon have enough to season the chicken.

    Place all together in a saucepan and cover with HOT water, bring to the boil and cover then reduce heat to simmer. Cook until tender, this usually takes about 10 -15 minutes or when all liquid is absorbed. Meanwhile chop a handful of parsley and add to rice when cooked just before serving

I am looking for some grain free recipe as I cannot eat any grains at all please thank you
