Easy Chicken & Tomato Bake

A quick throw together recipe that tastes great


  • 6 waxy potatoes

  • 8 chicken thigh fillets

  • bunch of vine ripened cherry tomatoes

  • fresh oregano

  • red wine vinegar


  • 1.

    Spray a baking dish with olive oil and toss the potatoes that you have cut into quaters or a bit smaller, depending on the size(you dont have to peel them)

  • 2.

    Bake in a fairly hot oven for approx 15 mins

  • 3.

    Cut the chicken into large bitsize pieces and pan fry to brown

  • 4.

    Place on top of potatoes

  • 5.

    Drizzle with a good dash of red wine vinegar

  • 6.

    Top with cherry tomotes and fresh oregano

  • 7.

    Back into the oven to cook for approx 20 minutes


you can add more ingredients depending on how many people you are feeding, you can also turn the oven down very low and keep it warm if you guests are running late and it shouldnt spoil (it happened to me and it still tasted great)
