I grow Navel Oranges and last year, I had a bumper crop and I made the cake every alternate day and distributed them to my friends and my husband's office colleagues.
Preheat oven to 180C
Grease 22cm baking pan with olive oil spray- set aside
In a food processor - process oranges and sugar until finely chopped
Add Ingredients B and process until well combined
Finally add Ingredients C and mix well
Spread mixture evenly onto the greased baking pan
Cook in a moderate oven 180C for about 45 minutes or until cooked when tested.
Stand cake in pan for 5 minutes before turning out onto a wire rack to cool.
This is a very moist cake. Do not process the ingredients too much. Maximum processing time is 8 mins. Olive oil can be used instead of butter.
