Ten minutes Orange & Poppy Seed cake

I grow Navel Oranges and last year, I had a bumper crop and I made the cake every alternate day and distributed them to my friends and my husband's office colleagues.

Serves 12

Ingredients

  • Ingredients a
  • 220 gm navel oranges or 2 large navel oranges - cut into segments including skin
  • ¾ cup sugar
  • Ingredients b
  • 2 cups self raising flour
  • 3 eggs
  • 190 g butter - at room temperature
  • 2 tablespoons of olive oil
  • Ingredients c
  • 2 tablespoons black poppy seeds
  • Olive oil spray - to oil baking pan

Method

  1. Preheat oven to 180C
  2. Grease 22cm baking pan with olive oil spray- set aside
  3. In a food processor - process oranges and sugar until finely chopped
  4. Add Ingredients B and process until well combined
  5. Finally add Ingredients C and mix well
  6. Spread mixture evenly onto the greased baking pan
  7. Cook in a moderate oven 180C for about 45 minutes or until cooked when tested.
  8. Stand cake in pan for 5 minutes before turning out onto a wire rack to cool.

Notes & Tips

This is a very moist cake. Do not process the ingredients too much. Maximum processing time is 8 mins. Olive oil can be used instead of butter.
