Sift the flour, baking powder, bicarbonate of soda and sugar. Make a well in the centre. Stir in the buttermilk, eggs and vanilla until just combined.
Lightly grease a non-stick pan with a bit of butter or oil. Pour in the batter and cook over medium heat. Turn pancake over when bubbles appear on the top side of the pancake. Cook for another minute or so, until the pancake is lightly golden on both sides. Repeat with remaining batter.

Take care not to over beat the batter as the pancakes will become tough.
Sorry to be a doubting thomas but I also added a pinch of salt to the mixture and made sure that I only just combined mixture. Lovely and light pancakes. I served them with some frozen mixed fruit that I had warmed and drizzled in honey. Lovely. The rest of the pancakes I made into pikelets but they didn't last long.
Best with blueberries and ice cream! Lightly heat the blueberries in a suacepan with a very little bit of water. Gently cush the blueberries as they are being heated to make a sauce. Very nice!
Very nice, used the Dairy Farmers buttermilk and it was lovely. Didn't have that strong odour like the ones you tend to get at cafe's

Hi! THis recipe sounds great but I am very doubtful about the 1 TABLE spoon of vanilla. I suspect this is supposed to be 1 TEA spoon.
