Fish with Mango Salsa


Crisp fish dish with delightful salsa

Serves 4

Ingredients

  • 1 cup corn kernels
  • 1 small spanish onion finely chopped
  • 2 mangos peeled & finely chopped
  • 1 avocado finely chopped
  • 1/3 cup (80ml) lime juice
  • 2 tbs olive oil
  • 1/2 tsp ground cumin
  • 3 cloves garlic crushed
  • 1 tsp black pepper corns finely crushed
  • 650g white fish fillets, skinned, pin-boned
  • 1/4 tsp chilli powder
  • 1 cup (150g) cornflour
  • 2 tsp dried oregano
  • Vegitable oil for shallow frying
  • 1/4 cup coriander leaves

Method

  1. Combine corn, onion, mangos, avocado, 2tbs lime juice, olive oil & cumin.
  2. Season to taste with salt & pepper. Refingerate until ready to serve.
  3. Combine garlic, remaining lime juice, pepper and 1 tsp salt. Add fish. Turn to coat. Cover. Refrigerate for 30 min.
  4. Combine chilli, cornflour & oregano. Pour oil into a large, deep fying pan. Heat over medium heat until hot. Dust fish in flour mixture. Shake off excess and shallow fry for 2 - 3 min or until golden. Drain on paper towels.
  5. Stir coriander into salsa. Serve
