Season to taste with salt & pepper. Refingerate until ready to serve.
Combine garlic, remaining lime juice, pepper and 1 tsp salt. Add fish. Turn to coat. Cover. Refrigerate for 30 min.
Combine chilli, cornflour & oregano. Pour oil into a large, deep fying pan. Heat over medium heat until hot. Dust fish in flour mixture. Shake off excess and shallow fry for 2 - 3 min or until golden. Drain on paper towels.
