An easy to prepare favourite of friends and family. It can be frozen several weeks before required. Original recipe from Family Circle magazine Nov 1984.
Combine almonds, cherries, peel, dried fruit, rum and spices in a bowl . Mix lightly, cover and marinate overnight.
Melt chocolate in preferred manner and quickly stir in marinated mixture, before the chocolate sets. Chill.
Line an 8 cup pudding basin with heavy duty foil, pressing out any wrinkles.
Stir fruit mixture into ice cream ( you will need a large bowl for this step): mix well.
Spoon into prepared basin. Cover and freeze until firm, preferably overnight.
To serve, unmould onto a chilled serving plate, remove the foil. Decorate with holly leaves nuts and cherries for a festive look.
