Ice Cream Christmas Pudding


An easy to prepare favourite of friends and family. It can be frozen several weeks before required. Original recipe from Family Circle magazine Nov 1984.

Serves 8 to 10

Ingredients

  • 125g blanched almonds, toasted & finely chopped (omit if allergic)
  • 125g whole glace` cherries (may be halved)
  • 1/3 cup chopped mixed peel
  • 1/3 cup each raisins, sultanas and currants (or 1 cup of mixed dried fruits)
  • 1/2 cup rum, sweet sherry or brandy
  • 1 tspn mixed spice
  • 1 tspn ground cinnamon
  • 1 teaspoon nutmeg
  • 90g cooking chocolate, cut up
  • 1 1/2 ltr vanilla ice cream, slightly softened
  • Holly leaves, extra chopped nuts and glace` cherries for decoration

Method

  1. Combine almonds, cherries, peel, dried fruit, rum and spices in a bowl . Mix lightly, cover and marinate overnight.
  2. Melt chocolate in preferred manner and quickly stir in marinated mixture, before the chocolate sets. Chill.
  3. Line an 8 cup pudding basin with heavy duty foil, pressing out any wrinkles.
  4. Stir fruit mixture into ice cream ( you will need a large bowl for this step): mix well.
  5. Spoon into prepared basin. Cover and freeze until firm, preferably overnight.
  6. To serve, unmould onto a chilled serving plate, remove the foil. Decorate with holly leaves nuts and cherries for a festive look.
