Clams Rollini

Clams with pasta & spices in a creamy sauce.

Ingredients

  • 200g can baby clams.(keep liquid)

  • 200g rollini (or other short pasta)

  • 3 cloves garlic (finely chopped).

  • 1/2 cup dry white wine.

  • 3 tblspns. cream.

  • 3 tspns. smoked paprika.

  • 1 1/2 tspns. turmeric.

  • 2 tblspns. finely chopped flat leaf parsley.

  • 2-3 tblspns. extra virgin olive oil.

  • 2 tspns. sambal olek.

  • salt & freshly grnd black pepper to taste.

  • freshly grated grana padano or other parmesan cheese.

Method

  • 1.

    Boil Pasta in plenty of boiling salted water ( for time on pkt.)

  • 2.

    Meanwhile add olive oil to large pan , add chopped garlic , sambal olek ,

  • 3.

    Paprika & turmeric , Cook on med. heat until garlic soft an spices fragrant.

  • 4.

    Add dry white wine cook for 1 min.

  • 5.

    Add cooked pasta , clams , cream & cook for 1-2 mins.

  • 6.

    Add salt & pepper to taste.

  • 7.

    Top with chopped parsley & Parmesan.

  • 8.

    Serve with piece of Flat Bread to mop up those yummy juices.

  • 9.

    RECIPE SERVES 2.

Notes

Strain liquid from clams as may have some grit.
