Diet Banana & Blueberry Muffins


These low calorie banana & blueberry muffins use applesauce in place of butter or oil and are so light, moist & delicious, you'll forget you're dieting!

Serves 12

Method

  1. Preheat oven to 175 degrees celsius. Line a 12-hole muffin tin with muffin cases.
  2. Mix together flour, baking powder, baking soda and salt. In a separate bowl, beat together mashed banana, sugar, egg and vanilla. Stir in the applesauce and vanilla. Stir banana mixture into flour until just combined and then add the blueberries. Divide batter evenly between the prepared muffin cups.
  3. Bake in preheated oven for 15 to 20 minutes, or until a toothpick inserted into centre of a muffin comes out clean. Let cool before serving.

Notes & Tips

TIP: These taste even better if you let them sit in an airtight container overnight and make a delicious morning tea snack served with a cup of green tea.
