Spicy BBQ ribs

Succulent ribs with the meat falling off the bone

Serves 2

Ingredients

  • 2 baby racks of pork ribs
  • 1 L water
  • 1/2 cup of cooking salt
  • 1/2 cup of sugar
  • 3/4 cup of white vinegar
  • 1/4 cup of Balsamic vinegar
  • BBQ marinade store bought 375 ml
  • 3 tbs Tabasco sauce

Method

  1. Add the cooking salt and sugar to the water and brine the ribs overnight in this solution (make sure all the meat is covered)
  2. Preheat oven to 180 degrees.
  3. Remove the ribs from the brine solution
  4. Mix the BBQ marinade and the tabasco sauce and baste the ribs with half of the marinade.
  5. Place ribs on rack in a roasting pan.
  6. Pour the vinegars (white and Balsamic) into the pan
  7. Cover the roasting pan tightly with foil.
  8. Cook in oven for about 1.5 hours until all the vinegar has dried up.
  9. Remove the ribs from the oven and place under the grill under medium-high setting after basting with the remainig marinade until golden (about 15 min total including turning)
