Griddled Peaches with Star Anise and Honey Cinnamon Yoghurt

Lightly griddled peaches with the flavour of Star Anise - perfect for summer and a great way to enjoy fruits in season.
This recipe can also be used for other stone fruits, but my personal favourite is peach.

  • 4 - 5 fresh peaches with their skin on

  • 4 tablespoons brown sugar

  • roughly a 2 cm slice of butter from a 250g slab

  • star anise

  • King Island Dairy Honey Cinnamon Yoghurt to serve

  • 1.

Using a griddle on the stove, melt butter, brown sugar and star anise together over low heat.

  • 2.

Cut peaches in half and remove stones.

  • 3.

Place peaches face down on griddle and cook lightly for 1-2 minutes and turn.

  • 4.

Serve peaches on warm plate with some of the melted butter/sugar/anise mixture spooned onto each peach.

  • 5.

Top with King Island Dairy Honey Cinnamon Yoghurt

Try not to overcook peaches or burn the sugar mixture by using too high a temperature.
