Peel onions, cut in half and cut the halves into slices
Juice oranges retaining both juice and any pulp
Prepare Pork Chops by seasoning with a little salt and dusting with cajun spice mix on both sides
Add to chops to pan with a little oil, and sprinkle sliced onions in over and around chops.
Once first side is cooked, turn chops pushing onions to the sides of the pan.
When chops are cooked to your liking, place on dish to rest
If onions are still undercooked, return to heat and brown/soften a little more before adding orange juice to pan
Stir orange juice and onions well and taste, if the orange juice seems a little bitter, adjust flavour by adding a little brown sugar according to taste.
Bring pan to boil and reduce the orange juice/onion mix by at least a 1/3 until a little thickened.
Serve Chops onto serving plates, returning any juices from resting to the orange and onion sauce.
Spoon the orange sauce and onion mix over the chops.

Whilst this can be made with bought orange juice and some brown sugar, I generally find real oranges far more tasty and satisfying in this dish
