Rice Peanut Salad

not expensive to make
yet commented upon every time i make it
a good one to take along to a gathering/barbi
can be made ahead will store in fridge for a couple of days


  • 2 cups uncooked rice

  • .5 of a cup soya sauce

  • .75 of a cup roasted peanuts

  • 2 stalks celery

  • 1 onion

  • optional sunflower seeds

  • dressing

  • .5 of a cup oil

  • 1 tsp crushed garlic

  • 1 tsp ginger

  • juice and rind of 1 lemon


  • 1.

    Cook rice,drain and pour soya sauce over mix in gently

  • 2.

    Leave to marinate for 2 hours

  • 3.

    Add rest of ingredients

  • 4.

    Pour dressing over rice.


other things can be added such as
red and green peppers
spring onion
have fun with your own variations
