Fresh Fruit Bircher with Sweet cashew cream

A healthy mixture of wonderful summer fruits with a smooth cashew cream topping which not only works well for breakfast but is good enough to have for lunch, snacks or dessert.

Serves 2 to 4

Ingredients

Method

  1. Saok the cashews in enough pure water to cover. If using dates soak them in a separate bowl of pure water to just cover. Set aside for at least 2 hours. You can soak overnight.
  2. Chop the pineapple, mango and banana and place in a bowl along with the coconut, almonds, apricots and sultanas. Stir to combine and set aside whilst preparing the cashew cream.
  3. Cashew Cream:
  4. In a blender or magic bullet with the flat blade, place the rinsed cashew, dates and some of the date soak water or the agave. Blend until smooth and creamy, if too thick add more of the date water, agave or pure water.. adjust to taste. Its important to keep blending until complety smooth and really creamy, may take a couple of minutes.
  5. To serve, spoon fruit mixture into serving bowls, sprinkle with granola or buckies and add a dollop of cashew cream... enjoy :)

Notes & Tips

This is a healthy raw recipe that is also wheat, gluten, dairy, sugar, soy, salt free meal. Also low gi because of the nuts and full of the healthy omega fats and contains 1-2serves of fruit depending on how big your serve is.

    this is not a picure of the Fruit Bircher wth the cashew cream as I dont have a photo of it but this is the Kitz Simply Granola with fruit on top. I will upload a photo of the recipe when I get one.
