White Chocolate and Mixed Berry Cake

A very easy but delicous cake to share


  • 2 eggs

  • 1 cup caster sugar

  • 300ml cream

  • 1 tsp vanilla essence

  • 1¾ cups sr flour

  • 1 cup frozen berries

  • 1 cup white chocolate chips


  • 1.

    Preheat the oven to 180ºC.

  • 2.

    Grease a 20cm baking tin and line it with baking paper.

  • 3.

    Beat the eggs and sugar together until thick. Add the cream and vanilla essence and mix well. Add the sifted flour and fold in until the mixture is smooth. Fold in the berries and chocolate chips.

  • 4.

    Pour the mixture into the prepared tin and cook for approximately 1 hour (check at 50 minutes). It’s cooked when a skewer inserted into the middle of the cake comes out clean. Allow the cake to cool in the tin, then turn it out and dust with icing sugar or top with your favourite icing.

I have made this cake and it is delicious. I vary the fruit by either using 1 cup mashed banana or any other dry fruits up to a cup. Stone fruits make it too moist. Enjoy!
