Scallop Skewers

I was driving past a roadside seafood vendor last week and he had a sign up for fresh scallops in their shells for only $7.50kg. i just couldn't resist. So I bought them and took them home, cleaned them up and skewered them with whatever I could find in the fridge. These were the best. You can readily get scallop meat at your fishmongers, but you can never tell how fresh it is, and the fresher the better. If you do get your scallops in their shells, add 30-40 minutes to preperation time to clean them


  • 500 g scallop meat or 2 kg scallops in their shell

  • 2 punnets of cherry tomatoes, different colours if possible

  • 100 g pancetta strips

  • Sea salt

  • 16 skewers

  • Salad and lime wedges to serve


  • 1.

    If you have bought scallops in their shell, clean them

  • 2.

    Skewer the scallop meat and cherry tomatoes alternatively

  • 3.

    Wrap pancetta between the scallops and cherry tomatoes

  • 4.

    Barbeque for 5 to 7 minutes depending on the size of the cherry tomatoes seasoning with sea salt as you turn

  • 5.

    Serve with a salad and a wedge of lime
