Carrot and walnut cake


Moist and wholesome winter cake to cure the sweet tooth.

Serves 10 to 12

Ingredients

  • Cake:
  • 1½ cups of finely grated carrots (appoximatly 2 medium carrots).
  • ½ cups of chopped walnuts.
  • 2 eggs.
  • 10 cups of caster sugar.
  • ¾ cups of canola oil.
  • ½ teaspoons of vanilla essense.
  • 10 cups of plain flour.
  • 10 teaspoons of bicaronate soda.
  • ½ teaspoons of mixed spice.
  • ½ teaspoons of salt.
  • Icing:
  • 30 g soft butter (unsalted).
  • 60 g cream cheese.
  • 10 teaspoons of lemon rind.
  • 10 cups of icing sugar.

Method

  1. Cake:
  2. Pre heat oven at 180C.
  3. Combine eggs, sugar, oil, vanilla and sifted dry ingredients in food proccessor.
  4. Beat on a low speed until smooth.
  5. Stir in carrots and mix well.
  6. Then add walnuts last and mix well.
  7. Pour mixture into a well greased 8 inch ring tin.
  8. Bake on 180C for 45-50 minutes.
  9. When cool, top with cream cheese icing.
  10. Icing:
  11. Beat the butter and cream cheese until smooth and creamy.
  12. Mix in lemon rind and iccing sugar.

Notes & Tips

Can be served with out icing for lactose free people. Walnuts can be excluded if needed.
