Chargrilled proscuitto wrapped fillet steak, served on a bed of creamy potato mash, accompanied with green beans and a mushroom reduction.
Wrap fillet steak portions with proscuitto, BBQ or chargrill to medium rare or to your liking. Cover & allow to rest for 5 mins. Meanwhile fry spring onions and mushrooms in a pan, deglaze with red wine, add beef stock & thyme, season to taste, reduce to thicken. Serve steak on a bed of creamy potato mash, drizzle with sauce & serve with green beans.
